Bright and Easy Sheet-Pan Dinner

Salmon roasted with potatoes and radishes is a showstopper for any weeknight or casual dinner.

The combination of sweet maple syrup and tangy mustard creates a golden, flavorful crust on the fish while keeping it moist and tender. Roasted radishes transform from crisp to tender with a mellow, peppery flavor, perfectly complementing the creamy texture of the small potatoes. This one-pan method delivers maximum impact with minimal dishes, making it ideal for busy nights or when entertaining friends.

Ingredients

Vegetables:

1. 2 bunches radishes, trimmed, halved, quartered if large

2. 2 lb. small potatoes, scrubbed, halved

3. ¼ cup extra-virgin olive oil

4. 1½ tsp. Diamond Crystal or ¾ tsp. Morton kosher salt, plus more

5. ¾ tsp. freshly ground pepper, plus more

Salmon Glaze:

6. ½ cup Dijon mustard

7. 3 Tbsp. pure maple syrup

8. 1 tsp. garlic powder

9. Pinch of salt and freshly ground pepper

Salmon & Serving:

10. 1½–2-lb. skinless center-cut salmon fillet

11. Juice of ½ large lemon

12. Dill sprigs and lemon wedges (optional)

Step-by-Step Preparation

1. Roast Vegetables

Preheat oven to 375°. Toss radishes and potatoes with olive oil, salt, and pepper on a large rimmed baking sheet until evenly coated. Spread in a single layer and roast until potatoes are just tender and lightly browned, about 45–55 minutes.

2. Prepare Glaze

In a small bowl, whisk together Dijon mustard, maple syrup, garlic powder, and a pinch of salt and pepper.

3. Add Salmon

Season salmon with salt and pepper. Move roasted vegetables to the edges of the pan and place salmon in the center. Set aside half the mustard glaze for later. Brush remaining glaze over salmon. Bake until the fish is nearly cooked through and opaque, about 15–17 minutes.

4. Broil for Golden Finish

Switch to broiler and carefully broil salmon and vegetables until salmon develops deep golden spots, about 3–8 minutes. Watch closely to prevent burning.

5. Finish and Serve

Mix reserved mustard glaze with lemon juice and drizzle over the salmon and vegetables. Garnish with dill sprigs and lemon wedges if desired. Serve directly from the pan for a rustic, impressive presentation.

Test Kitchen Tips

1. Let the salmon develop a slightly darker crust under the broiler—this intensifies flavor.

2. Roast radishes alongside potatoes to enjoy their tender, mellowed flavor.

3. Reserve part of the glaze to drizzle at the end for a fresh citrus punch.
